The chefs behind Grille-Nature are opening a second spot right next door. Radio-Nature, a smaller restaurant and wine bar from David McMillan and Derek Dammann, opens Wednesday, October 7 at 4pm beside Grille-Nature near Marché de l'Ouest in Dollard-des-Ormeaux. Opening night is also the launch of the wines from Hayfield Farm, McMillan's farm and vineyard in Saint-Armand.

From Grille-Nature to Radio-Nature

McMillan, co-founder of Joe Beef, Liverpool House and Vin Papillon, and Dammann, formerly of Maison Publique, opened Grille-Nature in late November 2025. The grill-and-seafood restaurant quickly became one of the most talked-about openings in Montreal and landed on Canada's 100 Best list this year.

McMillan has lived in the West Island, and he's long said one of his last restaurants would be out this way. Just weeks after Grille-Nature opened, the pair were already talking about a second, more casual spot next door. That project is Radio-Nature.

What to expect

Radio-Nature is smaller and more relaxed than its neighbour. There are no reservations, just tables for four or six and seats at the bar, so it's an easy place to decide on at the last minute: drop in, share a few plates, have a glass of wine. The walls feature work by Montreal artist Joe Lima.

Char-grilled Westy Oysters

The menu is about a dozen dishes, sized somewhere between an appetizer and a main and meant for sharing. McMillan is especially excited about the carta di musica, a thin, crispy bread cooked over charcoal and topped with vegetables, which he likens to an Italian taco. Other dishes include green chile confit wings, char-grilled Westy oysters, a rabbit pie and a mushroom parfait. And he wants people to know this is a restaurant with real food, not just a place to have a drink.

Prices are in the same range as Grille-Nature, minus the steaks, and the wine list is shared, with the Hayfield wines front and centre. Much of the produce comes from the two chefs' own farms, Hayfield Farm and Dammann's Saintweed Acres in Oka: apples, beets, beans, squash. The menu will shift as the fall harvest comes in.

As for the name? McMillan says it was inspired by his love of vintage radios. He has always loved collecting radios and radio imagery.
